1.6 pounds of potatoes
7 ounces of fresh goat's cheese
3 tablespoons of grated pecorino cheese
Salt to taste
Freshly ground black pepper to taste
2 eggs, separated
Olive oil
Preheat the oven to 350 degrees F.
Boil, peel, and mash the potatoes.
Stir the goat cheese and 2 tablespoons of the grated pecorino into the mashed potatoes.
Season the potato mixture with salt and pepper to taste. Allow the mixture to cool.
Stir the egg yolks into the potato mixture. If the mixture is a little too dry or stiff, add a little fresh milk.
Beat the egg whites into stiff peaks and fold them into the potato mixture.
Pour the potato mixture into a well-oiled baking dish or a souffle dish. Sprinkle the mixture with the remaining pecorino cheese.
Bake for 20 to 25 minutes.
Remove the flan from the oven and allow it to cool completely before serving.
