Barley with Mushrooms

1/2 cup of you favorite chopped fresh mushrooms
1/2 cup of chopped onion
1/4 cup of butter
2 cups of barley
4 cups of vegetable broth
Salt  to taste
Freshly ground black pepper to taste

Saute the mushrooms and the onion in the butter until tender.

Stir in the barley and the broth. Cover, bring to the boil and reduce the heat to low simmer.

Cook, covered, about 30 minutes or until the liquid is absorbed and the barley is soft.

Season with the salt and the pepper.

Serve hot.
