Royal Beets
16 ounces of beets
1/2 cup of sugar
2 tablespoons of flour
1/2 cup of cider vinegar
1/2 cup of orange juice
1/4 cup of water
2 tablespoons of butter
1/2 teaspoon of salt
Leaf lettuce
Roast the beets then cool.
When the beets are cool enough handle, remove the skins and slice.
Mix the sugar and the flour, stir in the vinegar, the juice, and the water.
Cook this mixture, stirring frequently, until it thickens.
Add the butter and the salt and stir well.
Mix the sauce and the beets just before serving.
Serve the sauced beets ob leaf lettuce.
