Avocado Mayonnaise
This is a great mayo. I've used it in potato salad, as a sandwich spread, and as a dressing for tomato salad.
1 large avocado (Haas are the best)
The juice of 1/2 a lemon
1/4 salt (You may want to stir in a bit more when all is finished.)
A pinch of cayenne pepper powder
1/4 cup of extra-virgin olive oil (This is an estimate.)
Put the avocado flesh into a blender.
Add the lemon juice, the salt, and the cayenne and blend.
While the machine is running, add the oil very slowly. This is the secret to making a nice mayonnaise, add the oil slowly.
You may have to stop the machine several time to scrape down the sides of the blender.
When you have a smooth mayonnaise to your liking, stop adding the oil and stop the machine. Remove the mayonnaise to a serving bowl.
Store any leftover in a tightly covered container in the refrigerator, This mayonnaise keeps well for about 5 days without discoloration.
