Sauteed Rice with Leeks


2 leeks
1/4 cup of olive oil
1 cup of minced onion
1 tablespoon of flour
1 tablespoon of salt
1/2 teaspoon of sugar
4 cups of water
1 cup of uncooked rice

Clean and trim the leeks. Slice them into rings.

In a lidded saute pan, heat the oil over medium heat and cook the minced onion until it's soft and translucent, but not brown, about 5 minutes.

Add the flour, the salt, and the sugar and cook, stirring constantly, for 1 minute.

Add the water and bring to the boil. The mixture will thicken slightly.

Add the rice and the leek rings. Stir to coat the rice and the leeks. Cover, reduce the heat to low, and simmer until the leeks and the rice are cooked and have absorbed the liquid. This should take 20 to 25 minutes.

This will make 4 side dish or 2 main dish servings.
