Green Onion Fritters
Vegetable oil for frying
1 cup of all-in-one pancake mix
1/2 cup of water
8 scallions, trimmed and chopped
A pinch of cayenne powder
Salt to taste
Freshly ground black pepper to taste
Heat the oil.
In a bowl, make the batter by combining the all-in-one pancake mix with the water, (The batter will be a bit thick.)
Add the chopped green onions and season with the cayenne, the salt, and the pepper.
When the oil is ready for frying, drop spoonfuls of the batter into it and fry on all sides until the fritters are golden brown and puffy. This should take no more than 3 or 4 minutes.
Remove the fritters from the oil and drain on a paper towel lined plate.
Season with a bit more salt while they are still hot.
Serve with sour cream or horseradish.
