Grandma's Sweet-and-Sour Cabbage


1/4 cup of butter
1 medium onion, chopped
8 cups of chopped red cabbage (A medium head should give you 8 cups.)
1 teaspoon of salt
A few grinds of freshly ground black pepper
2 medium tart apples, peeled and chopped
1/4 cup of water
1/2 cup of cider vinegar
1/3 cup of brown sugar, packed

In a large saucepan, melt the butter and saute the onion until it's tender.

Stir in the cabbage, the salt, and the pepper. Reduce the heat, cover, and simmer for 10 minutes.

Stir in the chopped apples and the water, bring to the boil, reduce the heat, cover and simmer for 45 minutes or until the apples and the cabbage are tender.

Combine the vinegar and the brown sugar. Stir this mixture into the cabbage and the apples.

Bring it all to the boil, reduce the heat, and simmer uncovered for 15 minutes or until the apples and the cabbage are glazed.
