A Quick Pickled Onion Recipe



2 tablespoons of sunflower seeds
1 pound of pearl onions, peeled
Salt
2 tablespoons of white wine vinegar
1 tablespoon of rice malt syrup (corn syrup may be substituted)
1 tablespoon of soy sauce (tamari works very well)
Parsley, chopped





Heat the oil in a saucepan and add the onions. Saute the onions over medium heat for a few minutes. Add salt to taste, cover with water, and simmer for 35 to 40 minutes.

Drain the onions and set them aside.

Mix the vinegar, the syrup, and the soy sauce in a small bowl.

Pour the dressing over the onions and allow to set for 5 minutes. Stir the onions and allow to set for 5 more minutes.

Sprinkle the onions with the parsley.

These onions are a good side dish for a cheese or pasta main course.
