Starving-Student Refried Bean Pie
2 burrito-size (10-inch) flour tortillas
One 16-ounce can of refired beans (regular or spicy)
1 cup of cubed queso fresco or grated cheddar cheese
Diced tomato
Chopped lettuce
Your favorite salsa
Place one of the tortillas on a lightly oiled round casserole.
In a mixing bowl, combine the refired beans with 1/4 cup of hot water and stir together.
Spread the refried bean mixture over the tortilla, sprinkle with the grated cheese, top with the remaining tortilla, and cover.
Microwave until hot, 2 to 3 minutes.
Cut into wedges to serve. Top each wedge with the tomato and lettuce.
Pass the salsa.
Note: Sour cream may be added along with the tomato and lettuce.
