Spoon Bread
1 cup of cornmeal (maize)
2 tablespoons of butter
3 cups of milk, room temperature
4 eggs, beaten
1 cup of milk, room temperature
1/2 teaspoon of salt
Preheat the oven to 400 degrees F.
In a saucepan combine the cornmeal, the butter, and the 3 cups of milk. Bring this to a boil, stirring constantly.
When thickened, remove from the heat.
Add the beaten eggs, the 1 cup of milk and the salt to the batter.
Beat well.
Pour the mixture into a greased casserole and bake for 45 minutes.
Spoon servings onto individual dishes and offer room temperature butter.
