2 cups of chopped green tomatoes
1 medium onion, finely chopped
1 medium green pepper, chopped
1/2 cup of white vinegar
1 teaspoon of mustard seed
1/4 cup of sugar
1 tablespoon of salt
1/4 teaspoon of prepared mustard
Combine all the ingredients in a large pot and bring to the boil. Lower the heat to simmer, cover, and cook for 5 minutes.
Allow the mixture to cool.
Chill for several days to allow the flavors to blend.
This recipe makes about 1 1/2 pints of relish.
