Greek Farmer Salad for Two
3 radishes, thinly sliced
2 tomatoes, thinly sliced
8 slices of cucumber
1/2 of a green bell pepper, finely chopped
2 lettuce leaves, thinly shredded
2 scallions, thinly sliced
1/2 of a medium onion, thinly sliced
4 teaspoons of chopped parsley
4 teaspoons of chopped mint
Place all the ingredients in a large bowl and gently toss.
For the Dressing:
1/2 teaspoon of chopped fresh oregano
3 1/3 tablespoons of olive oil
4 teaspoons of red wine vinegar
Mix the dressing ingredients and pour over the salad.
Again, gently toss the salad.
Divide the salad between two serving bowls.
For the Garnish:
4 ounces of crumbles feta cheese
8 black olives
Garnish each bowl with 2 ounces of crumbled feta cheese and 4 black olives.
