East African Spinach in Coconut Milk

1 onion, finely chopped
1 cup of canned tomatoes, chopped
2 pounds of spinach, chopped
1 cup of coconut milk
1 teaspoon of curry powder
Salt to taste

Put the onion and the tomatoes in a soup pot and bring to the boil. Cook for 5 minutes.

Add the spinach, the coconut milk, and the curry powder. Bring to the boil, lower the heat, and simmer for 15 minutes.

Season to taste with the salt.

Serve with white rice.
