Candied Sweet Potatoes

In my family, sweet potatoes have always had two steps in their preparation and eating. One the first evening the whole sweet potatoes are steamed in their jackets, then eaten for supper. They're spread with butter and sprinkled with salt. The leftover sweet potatoes (and a large batch is always made) are candied the next night for supper.

Candied Sweet Potatoes

6 medium leftover steamed sweet potatoes
4 tablespoons of butter
3/4 of a cup of brown sugar
1/2 cup of water

Remove the peels from the steamed sweet potatoes. Cut the potatoes in half lengthwise.

Melt the butter in a frying pan. Add the sugar to the melted butter. Stir the mixture until the brown sugar melts.

Carefully add water to the butter mixture and bring it to the boil.

Lay the sweet potato slices in the syrup and cook slowly.

Use a metal spatula to turn the slices so both sides brown evenly.

Serve.
