Sunny Salad


Baby spinach leaves
1 medium red bell pepper, cut into rings and seeds removed
1 medium green bell pepper, cit into rings and seeds removed
3 oranges, peeled and sliced and seeds removed
2 medium ripe tomatoes, sliced
1/3 cup of crumbled feta cheese

Dressing:
2 tablespoons of frozen orange concentrate, thawed
2 tablespoons of white wine vinegar
1 tablespoon of very thinly sliced green onion, only the green parts
1/2 teaspoon of Dijon mustard

Line 4 salad dishes with the spinach leaves. Arrange the sliced peppers, oranges, and tomatoes on top of the leaves.

Sprinkle the salads with the crumbled feta.

Mix the dressing ingredients and drizzle over the salads.
