Peasant Soup


The artwork is an 1866 painting by William Morris Hunt entitled 'Italian Peasant Boy'.

2 medium onions, roughly chopped
3 plum tomatoes, roughly chopped
2 tablespoons of chopped flat-leaf parsley
2 tablespoons of olive oil
4 slices of stale bread
4 tablespoons of chopped fresh oregano, or st tablespoons of dry, crumbled
Salt to taste

Place the onions, the tomatoes, the parsley, and the olive oil in a soup pot, add enough water to cover and bring to the boil.

Reduce the boil to a hard simmer and cook for 10 minutes.

Break the bread into pieces and place them bowls. Sprinkle the oregano over the bread.

Pour the broth and the vegetables over the bread and serve.
