Refrigerator Pickles


4 cups of white vinegar
1 1/2 teaspoons of celery seeds
1 1/2 teaspoons of turmeric
4 cups of sugar
1 1/2 teaspoons of whole mustard seeds
1/4 cup of salt

This brine needs no boiling.

Mix all the ingredients.

Put cucumbers (sliced or whole) or blanched cauliflower or sliced bell peppers or virtually any vegetable you enjoy pickled into quart jars,

Pour the brine over the vegetables.

Put lids on the jars and refrigerate for a couple of days before serving.

The cucumbers or other vegetables will keep for months in the refrigerator.

You can add onions, garlic or herbs of your choice for flavoring.
