3/4 of a cup of dried black beans
4 cups of water
2 tablespoons of vegetable oil
1 medium-size yellow onion, chopped
2 cloves of garlic, minced
1 tablespoon of salt
Cayenne powder to taste
1 tablespoon of sugar
Place the beans and 2 cups of the water in a soup pot or Dutch oven and bring to the boil. Cover, turn off the heat and allow the beans to soak in the water for 1 hour. Do not remove the lid during the soaking.
Drain the beans and set them aside.
Heat the oil in a large sauce pan over medium heat.
Saute the onions for 5 minutes. Add the garlic and saute for 1 minute more.
Add the beans, the remain 2 cups of water, the salt, the cayenne, and the sugar.
Bring everything to the boil, Cover, reduce the heat, and simmer for 2 hours, or until the beans are tender.
Serve over cooked rice.
This recipe will serve 4 or 5 hungry young appetites.
