1 (8- to 10-ounce) package of fresh lo mein noodles or 1 (9-ounce) package of refrigerated fresh linguine
1 (16-ounce) package of Japanese-style frozen vegetables, thawed
2 (15-ounce) cans of vegetable broth
1/2 teaspoon of grated fresh ginger (or 1/4 teaspoon of ground ginger)
Teriyaki, Tamari, or soy sauce to taste
Cook the noodles according to package directions and drain.
While the water is coming to the boil for the noodles, steam the vegetables in a wok or saute pan. When the vegetables are done to your liking drain and replace the cover to keep them warm.
Add the cooked noodles, the broth, and the ginger to the wok and stir together. Cook over medium-high heat until it is all heated through.
Serve in shallow bowls, noodles and some broth.
Pass the teriyaki or Tamari to season the noodles.
