2 cups of thinly sliced English cucumbers
Salt
2 tablespoons of rice vinegar
1 tablespoon of sesame oil
A pinch of cayenne pepper
Put the cucumber in a colander, sprinkle them with of salt, and allow them to drain for at least 30 minutes until they soften and lose their juices. (Be sure to place the colander in the sink or over a large bowl so the juice don't run everywhere.)
Rinse the cucumbers under cold water and drain them well.
Transfer the cucumbers to a bowl and sprinkle them with the vinegar and the oil.
Season the cucumbers with the cayenne and toss them well to thoroughly mix everything.
Serve the cucumbers at room temperature or chilled.
