3/4 of a pound of soft tofu
3/4 of a pound of firm tofu
1/2 of a medium onion, chopped fine
2 medium carrots, chopped very fine
1/3 of a cup of nutritional yeast
2 teaspoons of tamari
1 1/2 teaspoon of garlic powder
1 1/2 teaspoon of salt
A few grinds of black pepper
2 tablespoons of extra-virgin olive oil
Crumble the tofu with a fork.
Add the ingredients as listed, stirring the oil in last.
Serve on bread with tomato, lettuce, and a sprinkling of sweet paprika.
