Frico


1/2 cup of butter
1 medium onion, thinly sliced
7 ounces of hard white cheese, thinly sliced
3 1/2 ounces of aged montasio cheese, thinly sliced
Salt and freshly ground black pepper

Heat the butter in a large frying pan. Add the sliced onion and saute until it begins to brown.

Add the cheese slices and mix.

Continue cooking until the cheese melts, forming a uniform layer.

Add the salt and the pepper to taste.

When the cheese forms a golden crust on the bottom, flip the frico. Cook until both sides have formed a golden-crust.

Remove the frico from the pan and place it on paper towels to absorb the excess oil.

Slice the frico into wedges and serve immediately.

Serve with polenta or bread.

Fresh sliced tomato or melon goes well with the frico.
