Basmati Rice with Raisins and Walnuts


1/2 cup of raisins
4 cups of vegetable broth
2 cups of basmati rice
2 pinches of turmeric
3/4 cup of freshly toasted walnuts

Bring one cup of water to the boil in a small saucepan. Remove the pan from the heat, add the raisins, cover, and allow to stand for 30 minutes. Drain the raisins and set aside.

Bring the vegetable broth to the boil in a large saucepan. Add the rice and the turmeric, stir well, and return to the boil. reduce the heat to very low, cover the pan, and simmer, without removing the lid, for 30 minutes.

Mix the raisins and the toasted walnuts gently, but thoroughly, into the rice. Us a wooden spoon so as to minimize breaking up the rice grains.
