Simple Cottage Cheese Pancakes





6 eggs
6 tablespoons of flour
1/4 teaspoon of salt
2 cups of cottage cheese






Separate the eggs.

Beat the whites until they are stiff and set it aside.

Beat the yolks with the flour, the salt, and the cottage cheese.

Fold together the beaten egg whites and the flour-cottage cheese mixture.

Grill the pancakes or fry them in an oiled skillet.

These are very good served with warmed apple sauce or other fruit.
