Starving-Student Green Chili Black Beans


1 tablespoon of olive oil
1 medium onion, finely chopped
4 cups of cooked black beans
1 small can of chopped mild green chilies

Heat the oil in a large saucepan. Add the onion and saute over medium heat until golden.

Add the beans, the chilies, and 1/4 cup of water.

Cook over medium heat until the mixture comes to a gentle simmer.

Remove 1/2 cup of the mixture, mash, and return to the saucepan.

Simmer gently for another 5 minutes, and serve.

Serve over cooked rice or wrapped in a warmed tortilla.
