Twice Baked Potatoes


4 baked potatoes, still warm, not to hot to handle
4 tablespoons of room-temperature butter
1/2 cup of milk
Salt and freshly ground black pepper to taste
1 cup of your your favorite cheese, grated

Preheat the oven to 350 degrees F.

Cut the baked potatoes in half and scoop out the meat. leave enough meat next to the skin to form the sides of a bowl.

Whip the removed potato meat with the butter and the milk.

Season to taste with the salt and the pepper.

Mound the mashed potato mixture bake into the potato halves. Sprinkle them with the cheese and bake in the 350 degree oven for about 30 minutes, or until the cheese is thoroughly melted and the potatoes are pleasantly hot.
