Pennsylvania-German Baked Tomato


1 1/2 pound of ripe red tomatoes
3/4 cup of all-purpose flour
5 1/3 tablespoons of butter, melted
1 tablespoon of light brown sugar
1/2 teaspoon of dry mustard
Salt to taste
Freshly ground black pepper to taste

Preheat the oven to 375 degrees Fahrenheit.

Peel the tomatoes by dipping them into boiling water for 1 to 2 minutes then dropping them into ice water. The skins will slip off.

Core the tomatoes and cut them in half crosswise.

Dredge each half completely in the flour. Then dip them into the melted butter and place them in a buttered baking dish.

Mix the remaining ingredients and sprinkle the blend over the tomato halves.

Bake for 25 to 30 minutes or until golden brown.

You can also broil the tomatoes for 5 to 7 minutes or until golden brown.

Serve as a side dish or as a light meal.
