Green Tomato Pie
2 tablespoons of flour
1 9-inch pie shell and top crust
4 cups of green tomatoes, sliced thin (leave the skins on)
1 cup of sugar
1/2 cup of brown sugar
3 tablespoons of freshly squeezed lemon juice
1 teaspoon of ground cinnamon
1/2 teaspoon of ground cloves
1 tablespoon of butter, cut into small pieces
Preheat the oven at 425 degrees Fahrenheit.
Sprinkle the bottom pie shell with the flour. Then layer the slices of tomato of the floured crust.
Mix the sugars, the lemon juice, and the spices together. Pour this mixture over the tomato slices.
Dot with the pieces of butter.
Cover with the top pie crust.
Bake the pie at 425 degrees for 15 minutes. Reduce the temperature to 375 degrees and bake an additional 30 minutes.
