Tomato Gravy
This is an old family recipe. I remember my grandmother and great-grandmother making it.
1 quart of peeled tomato slices (you may use canned tomatoes)
3 tablespoons of flour
2 to 3 tablespoons of water
4 tablespoons of brown sugar
Heat the tomatoes slowly until they reach the boiling point.
Meanwhile, stir the flour and water together until the mixture is smooth.
When the tomatoes come to a boil, add the flour-water paste and the brown sugar. Stir until the gravy thickens.
Serve over fried potatoes or toast.
I have altered this at times by replacing the brown sugar with salt and pepper and a little Tabasco sauce.
