Vegetable Dip Made with Bread and Garlic

1 head of garlic, peeled and crushed
2 cups of wholewheat bread, soaked in water and well squeezed
2 1/2 cups of extra-virgin olive oil
1/3 cup of wine vinegar
1 cup of walnuts (almonds may also be used), well grated
Salt to taste

Place the crushed garlic in a mixing bowl.

Then add alternately, and a little at a time the soaked bread the oil, and the vinegar.

Stir (or blend in a food processor) this all very well.

When you have the consistency you desire, add the walnuts.

You may want to adjust the consistence at this point with more bread or more oil and vinegar.

Season with the salt.

Serve with salad sticks (carrot, cucumber, celery, radish, etc.).
