Middle Eastern Tomato and Cucumber Salad


5-inch cucumber, diced
4 tomatoes, chopped
1 green (or red) bell pepper, chopped
2 scallions (spring onions), finely sliced on the diagonal
4 tablespoons for fresh parsley, chopped
2 tablespoons of fresh mint, chopped
1 tablespoon of freshly squeezed lemon juice
Extra-virgin olive oil to taste
Salt and freshly ground black pepper to taste

Place the cucumber, the tomatoes, the bell pepper, the scallions, the parsley, and the mint in a large salad bowl. Stir to combine well.

Mix together the lemon juice, the oil, and the salt and pepper.

Pour the dressing over the salad and mix well.

Serve.
