Lesotho Cooked Cabbage


Vegetable oil
1 onion, finely chopped
1/2 to 1 teaspoon of curry powder
Salt to taste
1 pound of cabbage, finely chopped
A little water
3 tomatoes, chopped

Heat the oil over medium-heat in a sauté pan. Add the onion and cook for 10 minutes.

Add the curry powder and the salt and stir well.

Add the cabbage and a wee bit of water. Stir. Cover the pan and boil for 10 minutes or until the cabbage is to the desired degree of tenderness.

Add the tomato, stir well, cook for 5 minutes.

Serve.
