Sauteed Shredded Zucchini




2 tablespoon of olive oil
2 tablespoons of finely chopped white onion
4 medium zucchini, coarsely shredded
1 teaspoon of finely chopped fresh oregano
Freshly ground black pepper to taste
Salt to taste
1 tablespoon of crumbled cotija cheese, or to taste (a mild feta may be used)





Heat the oil in a large skillet and cook the onion until it is slightly softened, but not browned, about 2 minutes.

Add the zucchini and the oregano. Cook the zucchini, stirring, until it is limp and hot, about 4 minutes.

Season with the pepper and the salt.

Put on a serving platter and sprinkle with the cheese.
