Forest Potatoes





Butter
1/2 cup of finely chopped onion
1/2 cup of chopped celery
1/2 cup of shredded carrot
1 clove of garlic, minced
2 cups of vegetable broth
4 cups of pared and cubed potatoes
Salt and freshly ground black pepper to taste
Parsley, chopped








Melt the butter in a good skillet.

Saute the onions, the celery, and the carrots over medium heat until they are tender.

Add the garlic and saute for a few seconds more.

Add the broth, the potatoes, the salt and pepper to taste and cover. Simmer for 10 minutes.

Remove the cover and continue to simmer, stirring occasionally, until the potatoes are tender and the broth thickens, perhaps 20 minutes.

Sprinkle with the parsley and serve.
