West Michigan Omelet
2 extra-large eggs
Salt to taste
Freshly ground black pepper to taste
1 tablespoon of snipped fresh chives
2 tablespoons of butter
2 ounces of Gouda cheese, sliced
Preheat the broiler.
Whisk the egg, the salt, the pepper, and the chives in a small bowl.
Melt the butter in your favorite omelet pan, swirling the butter to coat the skillet.
When the butter begins to bubble, pour the egg mixture into the skillet.
Place the cheese in the center of the egg mixture. Cook over low heat for a few seconds, or until the egg mixture begins to set.
Place the skillet in the oven under the broiler. Broil just until the cheese melts.
Remove the skillet from the oven. Using a spatula, carefully fold the omelet in half.
Serve immediately.
