Refried Bean Pie
2 burrito-size (10-inch) flour tortillas
16 ounces of warm refried beans
1/4 cup of warm water
1 cup of grated cheddar cheese
Chopped tomato
Chopped lettuce
Your favorite salsa (A tomatillo salsa is very nice with this pie.)
Preheat the oven to 350 degrees.
Put one of the tortillas in a lightly oiled round casserole.
In a mixing bowl, combine the refried beans with the water. Stir well.
Spread the refried beans over the tortilla. Sprinkle with the grated cheese and then top with the remaining tortilla.
Heat until very hot and the cheese has melted, perhaps 6 to 12 minutes. Watch the pie.
When ready, remove the pie from the oven, cut it into wedges.
Serve with a sprinkling of tomato and lettuce and some salsa on the side.
Chopped onion, and/or jalapeno, can be sprinkled on with the tomato and lettuce.
