Snow Peas and New Potatoes


2 tablespoons of unsalted butter
4 new potatoes, scrubbed and quartered
1 pound of fresh snow peas, trimmed
1 small onion, sliced into very thin rings
Salt to taste
Freshly ground black pepper to taste

In a heavy sauce pan, melt the butter and sauté the potatoes over medium-heat. Sauté the potatoes until they are golden and crisp.

Add the snow peas and cook for 5 to 7 minutes, until the peas are tender and crisp and bright green.

Season to taste with the salt and pepper.

Serve.
