Sour Cream Baked Potatoes






3 medium onions, chopped
3/4 cup of unsalted butter
10 medium potatoes
Salt to taste
Freshly ground black pepper to taste
1 cup of sour cream






Saute the chopped onion slowly in the butter for 45 minutes. You want to bring out the sugars and make the onions very sweet.

Peel and boil the potatoes until they're tender.

When the potatoes are done, drain them and then mash them by hand.

Add the cooked onions and any remaining butter in the pan to the potatoes. Mix well.

Add the salt and pepper to taste.

Add the sour cream and mix well again.

Check the seasoning.

Fluff the potatoes if needed.

Pour the mashed potatoes into a 2-quart casserole and bake on a preheated 400 degree F. oven for 15 minutes.

This recipe will make 6 or 8 servings. It reheats very well in the microwave oven or a conventional oven.
