Potatoes and Onions with Basil


1 pound of new potatoes, scrubbed and thinly sliced
1 tablespoon of olive oil
2 tablespoons of butter
1 medium onion, chopped
Fresh basil to taste, chopped
Salt and fresh ground black pepper to taste

Heat the oil and the butter in a large skillet. When the butter is melted, add the potatoes.

Cook the potatoes until they are lightly browned, stirring occasionally.

When the potatoes a browned add the onion. Cook for a few minutes more.

The onion should be warmed but still crisp.

When the onions are warm and crisp, add the basil, stir, and remove the skillet from the heat.

Season to taste with the salt and pepper.

Serve.
