Mashed Potato Tacos


Potatoes, peeled and cut into chunks
Butter
Salt
Corn tortillas
Vegetable oil
Your favorite salsa

Boil the potatoes until tender. Drain and mash with the butter. Season with the salt.

Soften the corn tortillas in a hot dry skillet until they are limp, 10 to 12 seconds.

Fill each tortilla with about 3 tablespoons of the mashed potatoes.

Brush the outside of each filled taco with the oil and put in a hot skillet. Cook the tacos, turning, until just starting to brown, but still pliable.

Serve with the salsa.
