Sand Tarts
1 cup of butter
2 cups of sugar
3 eggs
1 teaspoon of vanilla extract
1 teaspoon of salt
2 teaspoons of baking powder
4 cups of flour
Garnish: eggs whites plus colored sugar or crushed peanuts or crushed walnuts or crushed pecans.
Cream together the butter and the sugar.
Add the eggs and the vanilla to the butter mixture and beat until fluffy.
Mix the dry ingredients together and beat this into thje butter batter until a soft dough forms. Refrigerate the dough for several hours or overnight.
Roll the dough very thin and cut into decorative shapes with cookie cutters.
Brush the top of the cookies with egg whites and sprinkle with one of the suggested garnishes.
Bake in a preheated 350 degree (F.) oven for 8 to 10 minutes on greased cookie sheets.
This recipe will yield 4 to 5 dozen cookies.
