Little Fat Potato Patties
2 medium baking potatoes (about 1 pound), peeled and cut into chunks
1/2 cup of crumbled cotija or a mild feta cheese
2 tablespoons of masa harina (maze/corn flour)
2 large eggs, beaten
Salt to taste
Freshly ground black pepper to taste
Vegetable oil for frying
In a large saucepan, boil the potatoes in salted water until they're tender.
Drain the potatoes and mash them while they are still hot. Cool the mashed potatoes to lukewarm.
Add the cheese, the masa harina, the beaten egg, the salt, and the pepper. Mix everything very well.
Form the dough into small round patties 2-inches in diameter and 1/2-inch thick.
In a medium skillet, add 1/4 of oil. Heat the oil. Brown 3 or 4 of the patties at a time. Cook them until they are crisp and golden brown. Don't overcrowd the pan.
Drain the patties on paper towel.
Serve the patties while hot. Serve them with your favorite salsa.
