Picnic Relish



1 cup of finely chopped celery
1 cup of chopped green bell pepper
1/2 cup of sliced scallions
2 cups of diced tomato, with all the juices
1 cup of chopped cucumbers, with skin
1 tablespoon of chopped chives
1 tablespoon of chopped fresh flat-leaf parsley
3 tablespoons of apple cider vinegar
1 tablespoon of sugar
1/2 teaspoon of salt
Freshly ground black pepper to taste




Toss all the ingredients to thoroughly mix.

Chill for 1 hour.

Serve.
