Cauliflower with Cotija Cheese


1 medium cauliflower (about 1 1/2 pounds), cut into florets
1 tablespoon of room temperature unsalted butter (more to taste)
1 tablespoon of olive oil
Salt to taste
1/3 cup of crumbled cotija cheese
2 teaspoon of finely minced parsley or cilantro

Cook the cauliflower in a large pot of boiling water until just tender, perhaps 4 minutes.

Drain the cauliflower and return it while still hot to the pan. Add the butter, the oil, and the salt.

Stir gently to coat the cauliflower.

Transfer to a shallow serving bowl or platter and sprinkle with the cheese and the minced parsley or cilantro.

Serve hot.
