What Is Malt?

Malt is made from barley that is sprouted, roasted, and ground. This powder is used in the making of beer and spirits (primarily scotch) and malt vinegar. If the powdered malt is soaked in water, heated, and liquefied, the result is malt extract, a heavy syrup that is used as a sweetener. Dried and mixed with sugar and dried milk, malt extract becomes malted milk powder, the toasty-sweet stuff we stir into milk and ice-cream drinks. Malt tablets are also available in some pharmacies and are used as a dietary supplement rich in niacin and B-vitamins.
