1 (4.5 ounce) can of green chilies, drained and diced
2 cups of grated mozzarella cheese
2 green onions, sliced very thin
2 eggs, beaten
Preheat the oven to 350 degrees F.
Place the chilies in a 7 1/2x11 1/2 inch casserole.
Sprinkle the cheese over the chiles, and then the onion over the cheese.
Pour the beaten eggs over all.
You may want to sprinkle the pie with sweet or smoky paprika for garnish and a different taste twist.
Bake for 10 to 15 minutes, until the egg is set.
Serve with a tomato salad.
