Mandarin Salad with Orange Dressing


The Salad:

2 tomatoes, cut into wedges, and each wedge halved
2 (11 ounces) cans of mandarin oranges, drained
1 small red onion, thinly sliced
3 cups of your favorite greens, torn into bit-size pieces

Combine the ingredients in a serving bowl.


The Dressing:

1/4 cup of orange juice
2 teaspoons of red wine vinegar
1 tablespoon of extra-virgin olive oil
2 teaspoons of honey

The the ingredients for the dressing and then pour over the salad. Toss carefully.

Serve.
