Apricot-Spinach Salad


1 pound of fresh spinach, torn into bite-size pieces
1 medium red onion, very thinly sliced
6 ounces (or more if you are so inclined) of dried apricots, chopped
1/3 cup of toasted salted sunflower seeds
Your favorite vinaigrette

Combine the first four ingredients.

Serve with the vinaigrette on the side.
