Mashed Potato Casserole
4 large starchy potatoes
1/3 cup of sour cream
1 teaspoon of salt
A dash of freshly ground black pepper
1/2 teaspoon of sugar
1/4 cup of butter
Milk
1/8 teaspoon of dill seed
2 teaspoons of chives, chopped
1 cup of cooked baby spinach leaves, well drained and chopped
1/2 cup of cheddar cheese, grated
Preheat the oven to 400 degrees Fahrenheit.
Cook and mash the potatoes.
To the mashed potatoes add the sour cream, the salt, the pepper, the sugar, and the butter.
Add just enough milk to bring to the proper consistency and beat until fluffy.
Add the dill seed, the chives, and the spinach and blend carefully.
Place the mixture in a buttered casserole and top with the cheese.
Bake the casserole for 20 minutes.
Serve.
