1/2 pound (225 grams) of rice
Oil
1 onion, finely shopped
1 clove of garlic, crushed
1/4 teaspoon of chili powder
4 tomatoes, chopped
1/2 cup (60 grams) of fresh green peas
Salt to taste
Boil the rice according to the packet instructions. When finished, drain the rice and return it to the saucepan.
While the rice is cooking, heat the oil in a skillet and gently saute the onion for 5 minutes. Then add the garlic and the chili powder and continue cooking for 2 minutes.
Add the tomatoes and the peas to the onion mixture with salt to taste. Mix everything well and cook over medium heat for 2 minutes.
Transfer the tomato and pea mixture to the pan containing the rice. Mix well and carefully and heat for 10 minute.
Serve with tortillas and your favorite Mexican beer.
